Whole goose very classic

Feel like having goose? But don't feel like cooking yourself? No problem at all...

We source the delicious poultry from our local producers, such as Lukas from Kaltenwestheim, Waestemer Weidewirtschaft, or Biohof Feldfuchse from Thalau.

Aged and dried, soaked in salt water, seasoned and stuffed, and gently roasted in the oven for several hours. Finally, we present to you your very own goose, carve and serve it to you in 5 courses:

1st Course: Goose fat with fresh bread

2nd Course: Ragout of goose with airy potato foam

3rd Course: Essence of Goose with Semolina Dumplings

4th Course: Whole goose in a classic style - with Brussels sprouts, red cabbage, chestnuts, potato dumplings, and bread stuffing

5th Course: Oven-baked roasted apple with chocolate and pumpkin seed brittle

The menu price per goose is 299€. (for 4-5 persons)
